Eating Healthy: Veggie Sandwich Recipe

My parents are always saying how we need to eat healthy when we're in Melbourne and not resort to quick fixes like korean instant noodles or mee goreng or takeout.

So I've been on the hunt for satisfying but quick-to-make meals to prepare in Melbourne once we get back there.

This one I didn't really find, I just made it up - but even that gives me way too much credit because this is a Dave's Deli-inspired sandwich and it's not hard to guess what's inside it.

Vegetable Sandwich

Coleslaw dressing
Tomatoes
Pineapple cubes (optional)
Cabbage (cut up into strips)
Carrots (sliced)
Onions (sliced)
Shredded cheese (I like mozarella)
Bread (your favourite type)

p.s. You can get ready-made coleslaw dressing in stores, but if you wanna make it from scratch - you'll need:

Mayo 2 tablespoons
Sour cream 2 tablespoons
Mustard 1 teaspoon
Vinegar 2 tablespoons
Sugar 1 teaspoon
Salt and Pepper to taste

Just add the cabbage, carrots, and onions to the coleslaw dressing and mix.

Mix in about 2 handfuls of shredded cheese. (Preheat your oven to about 175 Celcius)

I'm using focaccia here - just spread the coleslaw onto your preferred type of bread, then lay the tomatoes on top of it.

Sprinkle more shredded cheese on it, then cover with a second slice of bread.

Put into the oven for about 10mins (or till the cheese melts)

Voila - simple veggie sandwich!
