Popsicle Recipe (With a Kick!)

Summer is coming, and I'm thinking up as many ways as I possibly can to combat the heat wave that is Melbourne.

One of my solutions?

A fridge chock-full of freezing cold popsicles.


So I thought I'd post a popsicle recipe that I'm dying to try, just in case you guys feel like trying it out too :)

This is a popsicle recipe with a kick (if you know what I mean), which I think is a great, fun way to start a night out with friends, or a night in, for that matter! Recipe comes from Savory.tv

Margarita Popsicles
(serves 4)

3/4 cup sugar
3/4 cup fresh lime juice
1/2 cup water
1 lime wedge
2 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
2 tablespoons tequila
2 tablespoons orange liqueur (recommended: Grand Marnier)
Kosher salt, for garnish
4 small cups, 4 popsicle sticks

Combine the sugar, lime juice, water, lemon juice, and orange juice in a small saucepan over medium heat. Stir until the sugar dissolves. Remove from heat and allow to cool.

Once it cools, transfer to a blender with tequila, orange liqueur, and lime wedge, and blend till smooth.

Pour into cups, then cover with tin foil. Place popsicle sticks through foil (this will hold the sticks in place)

Freeze until hard (preferably overnight). Before serving, run cup under hot water to loosen popsicle.

Garnish with kosher salt and serve.
